Baked plantain boat
2 ripe plantains - baste with butter - bake till golden
Boneless salt fish- boil the salt out for 30 mins
1 bell pepper / 3 colours and red onion diced
1 Garlic bulb crushed
olive oil ,garlic salt, onion salt
Sautee veg add saltfish - thyme - jeera- smoked paprika - water
simmer for 20 mins
add the mix to the baked plantain
Garnish with mango sour, scallion and fresh cucumber
Summer Salad
2 Chicken breasts - creole seasoning - grilled & sliced
1 bag of washed baby spinach
1 cup of pomegranate seeds
salt & pepper
Honey mustard dressing
Mix all together
